Indirect cooking is when the meat is not exposed to direct heat, instead it uses the surrounding heat to cook and to do this you will need to use a hooded BBQ.
To roast lamb, beef or your preferred meat preheat the BBQ in line with the type and cut of meat you are roasting. Place cooking tray on BBQ plate, position the meat in the centre of the BBQ, close the hood and roast for the recommended cooking time. Remove the roast when cooked to desired degree, a great way to check if it's cooked is to insert a thermometer into the thickest part of the meat for an accurate reading. For best results always rest your meat for at least 5 minutes before carving.
